Par-baking, sometimes called blind baking, is one of those small baking steps that makes a surprisingly big difference in the final pie. By partially baking the crust before adding the filling, you give it a head start in the oven. The result? A crust that stays crisp and flaky instead of turning soft or soggy underneath the filling.
This step is especially helpful for pies with juicy fillings like fruit or custard. Without that early bake, the filling can release moisture faster than the crust can cook, leaving the bottom layer underdone. Par-baking helps set the structure of the crust first, so it can hold up beautifully once the filling is added.
It’s a simple process: line your chilled pie crust with parchment, fill it with pie weights or dried beans, and bake until the edges begin to turn lightly golden. From there, your crust is ready for whatever delicious filling you have planned from silky custards to bubbling fruit pies.
Think of par-baking as giving your pie crust a little confidence before the big moment. With a quick head start in the oven, it’s ready to support every sweet, juicy bite that comes next.
