Brightening up humble ingredients is what started me down this windy, twisty road of cooking. To take something simple, like a bag of carrots, and transform it into a side dish that friends and family rave about- and, of course, beg for a recipe of, is my ultimate goal in this. This right here, checks off every mark.
A few years ago, I was attempting to get my picky toddlers to eat vegetables- generally a losing battle, when I stumbled upon what I call my “secret spice mix”. A little of this… a dash of that… and BAM! Flavor town! Suddenly, my girls are devouring carrots and asking for more! Suddenly, we are making them weekly.
Not only are they delicious, but, they are ridiculously easy to make. I’d say foolproof, but I’ve seen some of my friends try and cook (I’m sorry. I know you’re probably reading this- which, by the way, thank you- but you know who you are and you know it’s true. But, I still love you)!
Give them a try and let me know what you think! You won’t regret it!

Roasted Carrots
Equipment
- Vegetable Peeler
- Chef's Knife
- Cutting Board
- Roasting Dish
- Ramekin
- Silicone spatula
- Measuring cups and spoons
Ingredients
- 2 lbs carrots washed and peeled with ends removed
- 2 tbsp avocado oil or other oil of choice
- 1 tsp kosher salt
- 1/2 tsp sweet paprika smoked would work, too, if preferred
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp ground pepper
- 1/4 tsp cinnamon
Instructions
- Preheat the oven to 400 degrees. Place the oven rack in the middle position.
- Using a cutting board and knife, slice your carrots. I prefer to cut them on a diagonal, but you can cut them however you would like. In a pinch, I have also used baby carrots with success. After cutting, place the sliced carrots in a roasting dish.2 lbs carrots
- In a small ramekin dish, combine oil with the spices.2 tbsp avocado oil1 tsp kosher salt1/2 tsp sweet paprika1/2 tsp garlic powder1/2 tsp onion powder1/4 tsp ground pepper1/4 tsp cinnamon
- Once the spices are mixed into the oil, pour the oil mixture onto the carrots, using a silicone spatula to get everything out of the dish. Use the spatula to stir the carrots, until the spices are evenly distributed and the carrots are fully coated.
- Place the carrots in the oven for 1 hr, stirring every 15 minutes to prevent the carrots from sticking to the dish. If you prefer your carrots to have a little more of a crispy edge, bake them for an additional 15 minutes.
- Once baked, remove them from the oven and serve them immediately (or let them cool down a little- I leave that up to you!)
