Banana Bread

- Loaf pan These are my FAVORITE loaf pans. Every loaf always comes out beautiful and perfectly baked!
Ingredients
- 300 g all purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3 overly ripe bananas peeled
- 50 g avocado oil or other neutral flavored oil of choice
- 50 g unsweetened applesauce
- 100 g brown sugar
- 2 eggs
- 65 ml buttermilk
- 1 1/2 tsp vanilla
- 170 g mix ins This is optional, but I love adding in chocolate chips or walnuts
- Cooking spray
Instructions
- Preheat oven to 350 degrees. Place oven rack in the lower middle position.
- In a medium bowl, combine the flour, baking soda and salt. Stir to combine. Set aside.300 g all purpose flour1/2 tsp baking soda1/2 tsp salt
- In a large bowl, place ripe bananas and mash with a fork.3 overly ripe bananas
- To the bananas, add oil, applesauce, brown sugar, eggs, buttermilk and vanilla. Using a silicone spatula, stir to combine.50 g avocado oil50 g unsweetened applesauce100 g brown sugar2 eggs65 ml buttermilk1 1/2 tsp vanilla
- Add the flour mixture to the banana mixture. Using the silicone spatula, stir until combined. Stop once you no longer see flour streaks.
- Add in any desired mix-ins.170 g mix ins
- Grab your loaf pan and spray it with your cooking spray of choice- buttering the dish will also work.Cooking spray
- Pour mixture into the sprayed loaf.
- Place into preheated oven and bake for 60-70 minutes, until a skewer inserted into the bread comes out mostly clean- it may still have some crumb coming off and that is okay. so long as wet dough is not coming out. Until you get timings correct with your specific oven, I would check it at an hour.
- Let cool in pan for 15 minutes and then transfer to a cooling rack to finish cooling. For best results, let cool completely before slicing into the banana bread. ENJOY!
